Crowd Pleasing Corn & Fritos Salad
Here’s the recipe:
-6 ears of cooked sweet corn (can also use 30oz of canned whole kernel corn, drained)
-1 diced red or orange bell pepper
-2 cups of shredded Mexican blended cheese
-1 cup mayo
-black pepper to taste
-1 bag of Fritos (can use flavored Fritos)
Cut the corn from the cob and mix in a bowl with the red pepper, cheese, mayo and black pepper. When ready to serve, have the Fritos in a bowl next to the salad for people to top their salads with. Don’t mix in the salad beforehand, as the Fritos will become soggy. Serve up and enjoy!
